We cook all our meats over a wood fire, please allow a waiting time due to this method of cooking.

"L'immortela" is the edelweiss which blooms in the middle of August behind the Col d'Iseye and around the corner from old wedding photos. But it is also a hymn to freedom and love for the Pyrenees!

The "Insomés" Cup: chocolate ice cream, coffee ice cream, grape rum ice cream

From the Pyrenees, Aveyron and elsewhere, young people fled military service, embarked for the Americas, became rebellious.A hundred years later, those who said no to military service were called the O cjectors of C onscience, OC as "yes" in Béarnais!

The "Maria Blanca" Cup: vanilla ice cream, cherry sorbet, chocolate ice cream

In the XIXth century, the diva of "aurosteras" was aspoise. Maria Blanca composed and performed funeral songs and did not mince words!

The "La Belle Cagote" Cup: honey ice cream, cherry sorbet, hazelnut ice cream

Rejected by village societies, the Cagòts lived in the "" Chrestiaas "" neighborhoods. They were thus masters in the art of wood and left heads of œworks like the castle of Pau and the church of St Girons de Monein.
